My first encounter with Hariyali Chicken was when I tried Come Con Ella’s delightful recipe. The recipe starkly contrasted the usual tomato-onion mixture many Punjabi households are accustomed to. It was Kausar Ahmed’s book, The Karachi Kitchen, where I found another variant that introduced spring onions. It pounded boneless chicken breast instead of diced chicken, providing a unique touch to the traditional recipe.

With various renditions of this classic recipe, I combined the best elements from Mehrunnisa and Kausar’s recipes to craft a version that brings the most flavorful experience.

What is Hara Masala?

Hara Masala is a South Asian spice blend that shines due to its fresh ingredients – cilantro, mint, green chilies, and sometimes spring onions, all married together in a tangy yogurt base. The yogurt not only gives a rich texture but also tenderizes the meat.

Despite the common use of yogurt, many recipes use ground herbs and chilies as a standalone marinade or cooking sauce.

This dish is a wonderful introduction to South Asian cuisine for new people or those who find excessive use of ground spices overwhelming. It pairs well with both roti and plain basmati rice. Combine it with a drier vegetarian side like patta gobi (fried cabbage) or Gujarati-style aloo (spiced potatoes) for a balanced meal.

Essential Ingredients

  • Cilantro: Use a tightly packed, roughly chopped bunch with big stems removed.
  • Mint: Tightly packed and big stems removed.
  • Bird’s eye chilies: Choose 1-2 based on your spice preference. Serrano peppers can be a good substitute.
  • Full-fat yogurt will act as a tenderizer and give the dish a creamy texture.
  • Neutral oil: Canola, avocado, or vegetable oil are all suitable.
  • Garlic: Freshly crushed or store-bought.
  • Chicken: Opt for any boneless chicken fillet.
  • Salt: Adjust based on taste and the variety you use.
  • Ginger: Freshly crushed or store-bought.
  • Red chili flakes: Preferred for a more robust flavor.

Cooking Steps

  1. Prepare the Yogurt Sauce: Combine cilantro, green chilies, mint, and yogurt in a food processor until well mixed.
  2. Sear the Chicken: Heat oil in a medium-sized saucepan. Add garlic and fry until fragrant. Add diced chicken, salt, ginger, and red chili flakes, searing until the chicken turns white.
  3. Mix in the Yogurt Sauce: Reduce the heat and add the prepared sauce. Stir well, ensuring the chicken is coated evenly with the masala. Allow it to simmer under a partially covered lid for around 10 minutes.
  4. Final Touch: Remove the lid and increase the heat. Stir continuously to evaporate any excess water until the oil separates from the sauce.

Ingredients
  

  • ¾ cup cilantro (roughly chopped, big stems removed)
  • ¼ cup mint (big stems removed)
  • 1-2 bird's eye chilies
  • 1 ½ cups full-fat yogurt (lightly whisked)
  • ⅓ cup neutral oil (canola/sunflower/vegetable)
  • 1 pound (~450 grams) boneless chicken (diced)
  • 1 teaspoon salt (or to taste)
  • 2 teaspoons crushed garlic
  • 2 teaspoons crushed ginger
  • 2 teaspoon red chili flakes
  • Remove the lid, increase the heat to high, and stir continuously until excess water evaporates and the oil separates from the sauce.

Instructions
 

  • Mix cilantro, green chilies, mint, and yogurt in a food processor until well mixed.
  • In a medium-sized saucepan, heat oil. Fry the crushed garlic until fragrant.
  • Increase the heat to medium. Add diced chicken, salt, crushed ginger, and red chili flakes. Sear until the chicken is no longer pink.
  • Reduce the heat and add the yogurt mixture. Stir until the chicken is well-coated.
  • Let the mixture simmer under a partially covered lid for about 10 minutes.
