Ingredients
  

  • 1 kg Mutton
  • 4 medium Onions (sliced)
  • 2 tsp Ginger garlic paste
  • 2 tsp Red chili powder
  • ½ tsp Turmeric
  • 1 tsp Salt (or to taste)
  • ½ cup Ghee
  • 1 tsp Cumin powder
  • 1 tsp Dry coriander powder
  • 1 cup Yogurt
  • 2 Tomatoes (chopped)
  • 6-8 Green chilies
  • 1 medium piece of Ginger (julienne)
  • ½ bunch Green coriander (chopped)

Instructions
 

Preparing the Mutton:

  • Combine the mutton, sliced onions (reserving less than half for later), ginger garlic paste, red chili powder, turmeric, and salt in a cooking pan.
  • Add one glass of water, cover the pan, and cook the mixture until the water evaporates and the mutton is almost tender.

Tempering the Karahi:

  • Heat ghee in a frying pan and sauté the reserved onions until golden brown.
  • Add cumin powder and dry coriander powder to the fried onions. Stir well and immediately pour this ghee mixture into the cooked mutton.

Adding Flavors:

  • Add yogurt, chopped tomatoes, green chilies, Ginger, and coriander to the mutton. Add them in three batches and stir-fry after each addition.

Enhancing the Aroma:

  • Continue stir-frying the mutton until the ghee surfaces on top and the flavors have melded together beautifully.

Garnishing and Serving:

  • Garnish the masala mutton karahi with green chilies, Ginger, and coriander.
  • Serve this delectable dish with hot naan or tandoori roti, zeera raita, and a fresh salad.
